Organic Contaminants in Food
Organic contaminants are harmful substances present in trace amounts in food. Common contaminants such as pesticides and veterinary drug residues, biogenic amines, mycotoxins, plasticizers, and microplastics have gradually been included in the routine regulatory scope of the industry. However, the organic pollution risks in the food supply chain go far beyond this. Many compounds are easily overlooked but pose significant health threats that deserve attention, including persistent environmental contaminants (such as dioxins, polychlorinated biphenyls), food processing by-products (such as chloropropanol esters, polybrominated diphenyl ethers), and new synthetic compounds (such as perfluoroalkyl substances, PFAS).
