Biogenic Amines & Acrylamide Testing in Food

Biogenic amines are a class of low-molecular-weight organic bases, mainly produced by microbial decarboxylation of amino acids. They are commonly found in fermented foods, pickled meats, and fermented bean products. Biogenic amines mainly include tyramine, histamine, putrescine, cadaverine, phenylethylamine, tryptamine, spermidine and spermine, and are key risk factors in many food poisoning incidents. Their content and proportion can reflect important indicators of the quality and hygiene status of food and feed products, and are called the biogenic amine index (BAI).

Acrylamide is a potential carcinogen formed during high-temperature processing (such as frying, baking) of reducing sugars and asparagine through the Maillard reaction, and is widely present in daily foods such as potato chips, bread, and coffee.
