Botanical natural flavors are essential oils, infusions, tinctures, balsams, resins, and pure oils produced from the flowers, branches, leaves, grasses, roots, skins, stems, seeds, or fruits of aromatic plants by steam distillation, maceration, pressing, and absorption. The extracts are evaluated for aroma to determine their similarity and intensity to the target aroma. The extracts are then developed in formulations with other ingredients based on the desired flavor profile to obtain the final natural flavor product.

Animal natural flavors are secretions or excretions of animals. There are more than a dozen kinds of animal natural flavors, often musk, ambergris and so on.
